Wide. Shallow. A yeast crust with a rim like a low wall, filled to the edge. That is vlaai.
The name Limburgse vlaai is now protected by the European Union.
What the product dossier says
The Dutch product dossier for the protected name, filed on the site of the Netherlands Enterprise Agency (RVO), sets out the specification. A Limburgse vlaai has a diameter of at least 10 cm and at most 30 cm. The base is a yeast dough. The dossier names three types: open vlaai, kruimelvlaai, and reep- or dekselvlaai. The filling can be fruit, rice porridge, custard, semolina porridge, fresh cheese, a sugar-and-egg filling, or a combination. The area is the neighbouring Belgian province of Limburg and the Dutch province of Limburg. The dossier was submitted by a Dutch and a Belgian bakers’ association. It is the application version; the register entry is the final word.
The tradition
The dossier says the link to the region is a recipe rooted in local tradition. It cites an 1878 description of a “koek van tarwemeel met vruchtenmoes”, a wheat-flour cake with fruit purée, called vlaai at harvest feasts. Vlaai began in the home, it says, and over the twentieth century found its way to local bakers, growing into a symbol of the Limburg provinces in both countries.
The protected name
Commission Implementing Regulation (EU) 2024/253 enters “Limburgse vlaai” in the register of protected designations of origin and geographical indications as a protected geographical indication, in the class for bread, pastry, cakes, confectionery, biscuits and other baker’s wares. The EUR-Lex record gives the document date as 9 January 2024 and the first date of entry into force as 5 February 2024.
Questions a buyer would ask
Is every fruit pie in Limburg a vlaai? The specification fixes the diameter, the yeast-dough base, the types and the area. The dossier and the register entry are where to check a particular pie.
